Thursday April 23, 2020

You might have made chocolate chip cookies, banana bread, peanut butter cookies and even brownies baking at home during the pandemic. Have you tried Double Chocolate Peanut Butter Banana Bread?  This recipe makes one loaf.  However, Dietitian Britt Schuman-Humbert recommends doubling the recipe.  It goes fast!

Preheat oven to 350 degrees F.

  • 1 ½ cup mashed banana
  • ¼ cup creamy peanut butter
  • 1/3 cup plain Greek yogurt
  • 3 Tbsp melted butter
  • 2 Large eggs
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 1 tsp vanilla
  • 1 ½ cup all-purpose flour
  • ½ cup unsweetened cocoa powder
  • ¾ tsp baking powder
  • ½ tsp salt
  • 1 cup semi-sweet morsels

Grease a large loaf pan and set aside.  In a large bowl combine flour, cocoa, baking powder, salt and chocolate chips. Wisk until combined. In a separate bowl combine, banana, peanut butter, yogurt, butter, vanilla, sugar, brown sugar, and eggs until well incorporated.  Pour the wet ingredients into the dry ingredients and mix just until combined. Add batter to pan and bake for 1 hour and 10 minutes or until a toothpick in the center comes out clean.   Remove from oven and let cool in pan for 10 to 20 minutes. Remove from pan and cool on rack until room temperature.
